Tiger Milk Mushroom Supplementation by GKB- Is it worth the hype?


Tiger's Milk Mushroom is medicinal plant used by the aborigines in South East Asia for more than four centuries.

Tiger's Milk Mushroom is rich in nutrients such as polysaccharide, polysaccharide peptides, proteoglycans and tritepenoids. B-D-glucan is a type of polysaccharide found abundant in Tiger's Milk Mushroom that is touted to strengthen immunity against pathogens. It also has anticancer properties. 

Orang Asli has used Tiger Milk Mushroom traditionally in treating cancer, coughs, asthma, lung diseases, and food poisoning, as well as to accelerate wound healing and promote general well being.  Hong Kong doctors have experience using Tiger Milk Mushroom in managing liver cancer, gastric ulcers, and chronic hepatitis. The University of Malaya has an excellent research paper talking about the scientific research behind the use of Tiger Milk Mushroom.

Alfredo Angel Hair Pasta with Cheesy Baked Prawns Recipe

Mr Husband won a WhatsApp Group seafood auction and brought home a bunch of fresh prawns. Time for some seafood feast during MCO! We really have to reward ourselves for keeping our sanity working and babysitting simultaneously most of the time.

Alfredo Angel Hair Pasta Ingredients

200g Kimball Angel Hair Pasta
1tbsp butter
2 shredded Australian carrots
1 cup heavy cream 
1 clove garlic, crushed
100g Emborg cream cheese

Boil a pot of water. Add a pinch of salt. Cook pasta until al dente. Strain. 

Melt butter in a saucepan. Add chopped garlic and saute lightly until soft. 

Add carrots and saute until soft and the butter is flavored.

Add cream. If you want less fat and calorie, you can always substitute all or half of the cream with fresh milk or chicken stock. Simmer for one minute until combined. 

Add an egg and cook over low heat.

Add cream cheese. Stir until the cream cheese melts and the sauce thickens.

Set aside. Grind some black pepper to season.

Cheesy Baked Prawns Ingredients

4 big prawns
2 slices of Arla burger cheese slices
Dashes of black pepper
Dashes of Italian herbs seasoning
1 tablespoon of melted butter
1 tablespoon of minced garlic

Wash and devein the prawns.

Press the prawns such that it resembles a flat leaf shape. (I forgot this step!)

Brush with some melted butter, put a bit of minced garlic.

Sandwich half a piece of cheese in the prawn. The cheese is already quite salty so I didn't season the prawns.

Air fry at 180 degree Celsius for 12-15 minutes until the cheese melted and the prawns are cooked.

Plate them and enjoy!


Air Fried Tuna Cheese Wonton Recipe

Running out of ideas to put food on the table for teatime? I have a really simple recipe which only calls for 3 ingredients. Before you know it, the dish is ready within 15 minutes! I always prefer to air fry than deep fry so it's healthier. But air fried food is equally crispy and delicious. 

Ingredients

1 canned Ayam Brand tuna mayonnaise (or sardine)
1 packet Wonton skin
Shredded Emborg cheddar 
50 g (1 small) Carrot, shredded (optional)
Salt and pepper to taste (optional)
Oil

Mash tuna with a fork. Add carrots. Season with salt and pepper.

 Fill wonton skins with a teaspoon of filling each and some cheese. Wrap into half and secure wonton skin with a little water or beaten egg. 

Preheat oil in wok for deep frying. Deep fry wonton until golden brown and crispy. Drain off excess of in paper towel and serve immediately with cheese gratings.

OR 

Pre-heat air fryer at 200 ºC. Place wonton and air fry for 8 minutes, flip the wonton for even browning. 

Replace wonton skin with dumpling skin and blanch the dumplings in boiling water until they float on the surface for 2-3 minutes. Then air fry to make gyoza. 

Alternatively, use thawed popia skin instead to make air fried spring rolls.

Air Fried Tuna Cheese Bread Roll Recipe

Want nutritious yet filling iftar? But can't wake up at cook at 3am? Fret not! I have a simple recipe that's definitely a crowd pleaser and can be easily done in 20 minutes.

Filling:
1 small can of Ayam Brand tuna mayonnaise 
Emborg shredded cheddar and mozarella cheese

Other ingredients:
1 loaf Massimo Sandwich Loaf with Wheat Germ
1 eggs, beaten well
Salt and pepper to taste (optional)
Oil to coat air fryer

Method

Lay 2tsp tuna towards one side of the bread, then add cheese and roll it tight.

Dip in the egg mixture and air fry! I use butterfly airfryer at 230 C for 8 minutes.

You can swap the filling with sardine in tomato or Olive oil. Just make sure to cook it down with some onions to dry it up before wrapping.

I have also tried adding caramelized onions, pan fried diced potatoes and diced carrots to the mix with great result.

1 Pot Hainanese chicken rice

Easy all in one chicken rice. I need to put my Russell Taylor pressure cooker to use. Especially on weekdays when I'm at work and the children are at home. The beautiful part is especially the timer part when I just have to prepare the ingredients before hand and wait for the magic cooking to happen.

When I cook for 2, I can easily put everything into the pot, separated by a bowl using a stainless steel steaming rack to place the rice for steaming in the pressure cooker. But the following recipe is enough to feed 6 adults so I cooked the rice separately.

Here's my recipe.

Chicken ingredients:
1) 1 whole chicken
2) Marinate with: 3tbsp of
** light soya sauce
** oyster sauce
**dark soya sauce
3) Pinch of salt and pepper
4) 10 slices of ginger
4) 12 cloves of garlic
5) 1 stalk of spring onion

Rice ingredients:
1) 2 cups of Basmathi rice - wash and soak for 15minutes 
2) 4 cloves of garlic - minced 
3) 4 slices of ginger. 
4) 3 pieces of pandan leave. 
5) 3 cups of chicken sauce from above

Dipping sauce ingredients:
1) 2 tbsp shaoxing wine 
2) 2 tbsp sesame oil
3) 4 tbsp light soy sauce 
4) 2 tbsp sugar

Chilli garam ingredients:
1) 2 bird's eye chilli peppers (fresh)
2) 4 garlic clove(s)
3) 2cm Bentong ginger
4) 1 lime juiced
5) 1/2 tsp salt 
6) 1tsp sugar

Method:-
1) Use bake mode to stir fried the garlic & ginger. 
2) Drain the rice water and pour into the pot to stir fried together with the garlic, ginger and pandan leave. Stir fried for about 5 minutes. 

3) Scoop out all the rice and everything into a 
bowl that can use to steam the rice. Or cook using a separate rice cooker.
4) Place all the chicken ingredients and sauce into the pot. Add more water if you want more sauce for your chicken. 
6) Chicken mode P15.

7) Mix all ingredients for dipping sauce.
8) Blend all the chilli garam ingredients! (Can ke kept refrigerated up to 2 weeks)
9) Add some chicken stock (3tbsp) to the chilli garam (2tbsp) and dipping sauce before serving.

Air Fry Lazy Keto Sweet Potato Balls


Sweet potato is a versatile ingredient that can be made into both sweet and savoury dishes. It's full of nutrients and natural sweetness. Here's a simple dessert which can be made healthier with some twist.

1  sweet potato (about 500g)
3/4 cup all-purpose flour
2 tbsp coconut flour 
1 - 2 tablespoons water
2 tbsp sunflower oil
Desiccated coconut
2 tsp sugar
Coarsely chopped Gula Kabung (optional)

First, steam the sweet potatoes until the inside is cooked through.

Next, peel off the skin and keep the sweet potatoes. Mash and combine well with flour, oil, sugar(optional) and water to form a dough. It should be soft yet not sticking to the hand.

Roll the dough into balls and coat them with dessicated coconut.

You can insert chopped Gula Kabung straight into the center of the ball. Make sure it's wrapped well.

Coat the air fryer base with some oil.

Air fry for about 9mins ! The Gula Kabung should have just melted to make a lava center.

Banana balls!

The sweet potatoes can be replaced with ripe bananas or steamed pumpkins.

Serve warm.

Banana Coconut Cake Recipe

What to do when I have too many overripe bananas? Of course to make more banana cakes! I have decided to adapt the recipe by making it more tropical, adding some coconut into the mixture. I didn't add any sugar to the cake as the bananas were already sweet.

Ingredients
1 cup milk/cream (240ml)
½ cup unsweetened dried grated coconut (30g)
1¾ cup all-purpose flour (260g)
2 1/2 tsp baking powder
4 large ripe bananas
1 stick butter (½ cup/113g)
1 large egg

Combine milk and coconut in a bowl. Let it stand at room temperature for 30 minutes. 

In a medium sized bowl, combine all-purpose flour and baking powder. 

Stir to get ingredients well mixed. Peel and mash bananas in another bowl. 

Preheat oven to fan 180°C.

Cream butter and sugar until light and fluffy, about 2 minutes. 

Beat in egg.

Pour in half of the coconut mixture, half of the mashed bananas, and half of the flour mixture.

 Beat for 30 seconds. 
 
 Repeat.
 
 Mix until batter is smooth. This should take 1 to 2 minutes.

Pour batter into prepared pan.

Bake for 1 hour or until wooden pick inserted in the center comes out clean. 

Cool in the pan for 10 minutes, remove and cool on wire rack.
Enjoy a slice of cake with some cream cheese frosting or peanut butter ! Recipe for frosting here.
