Mixed berries cheesecake




Ingredients 

 1 prepared 9-inch (6 ounces) graham cracker crumb crust

2/3 cup (5 fluid-ounce can) NESTLÉ® CARNATION® Evaporated Fat Free Milk

1 package (8 ounces) fat free cream cheese, at room temperature

1 large egg

100ml strawberry cordial (got ours from Cameron Highlands!)

2 tablespoons all-purpose flour

1 teaspoon grated lemon peel (optional)

1 1/2 to 2 cups dried cranberries 



Method

Simply crush half a packet of digestive biscuits using food processor.

Melt 50g butter to help pressing the biscuit base onto the glassware. To make it quick, I froze the base for 30mins.



Make sure all ingredients are at room temperature.

Preheat oven 180C 

Mix all the other ingredients using food processor until smooth.

Pour the batter into glassware. Sprinkle some chopped cranberries on top.

Bake for 30mins or until center of chopstick becomes clean.

Refrigerate overnight- you can also freeze it for ice cream like consistency!



Bake for 35 to 40 minutes or until center is set.

Chocholate Banana Cake

It can be tough to get my boys to have more fruits. Therefore I have decided to sneak some bananas into my chocholate cake :p



Ingredients


1 3/4 cups (230 grams) all-purpose flour

3/4 cup (75 grams) unsweetened cocoa powder (regular unsweetened or Dutch-processed)

1 1/2 teaspoons (6 grams) baking powder

1 1/2 teaspoons (6 grams) baking soda

1/2 teaspoon (2 grams) salt

170 grams granulated white sugar

2 large eggs, at room temperature

1 cup (250 grams) mashed ripe bananas (about 2-4 large bananas)

1 cup (240 ml) filtered water or coffee, at room temperature

1/2 cup (120 ml) milk, at room temperature

1/2 cup (120 ml) corn, vegetable, safflower or canola oil

1 1/2 teaspoons (6 grams) pure vanilla extract (may omit)




I used my Phillips food processor to blend the bananas (If you have too many, you can freeze them and use them later). Remove the bananas. 

Beat eggs with oil. Then add in sugar. Add on the rest of the liquids. Add the mashed bananas. 

Add in all the dry ingredients. 


Preheat convection oven at 180 degrees C and bake for 35 to 40 minutes until a stick in the center is dry.

Enjoy the soft and fluffy cake! It is even better to have it with home made banana ice-cream!

Fluffy Baked Donuts

Adapted the recipe from here:


But we used melted butter replacing margarine and reduced sugar to 50g.



Mixing dough was made easy using Kenwood Breadmaker. Don’t forget to let the dough rest for an hour. Then shape the doughnuts. Cream cheese was pumped into the center. Let them rest again on the baking paper for 15mins. 

Brush the surface with beaten egg wash.


Bake for 20minutes at 180degree C.



Best served when warm!

Air Fried Instant Noodles Seafood Basket Recipe

Interestingly, we haven't even started eating the instant noodles in our pantry! 
So I was thinking what kind of twist can I put into 1 pack each of the Indomie Mee goreng, curry flavoured Maggi noodles and Cintan noodles-- maybe it's time to make seafood basket? We cooked up a spread for 3 adults and 2 toddlers.


Fish and Chips

Ingredients

1 pack noodles
1/2 cup all-purpose flour
Freshly ground black pepper
1 large egg
2 Dory fish fillets 
Vegetable oil
2 medium purple sweet potatoes
1 corn on cob

Instructions

Cut purple sweet potatoes into strips. 

Soak the cut sweet potatoes for 20-30 minutes in cool water and pat dry (this helps them to crisp up better).

In a plastic bag, mix the flour, Indomie seasoning and pepper.

In a bowl, mix the eggs with 2 tablespoons water.

Smash the noodles into small pieces and place it in a separate bowl.

Shake the fish pieces in the bag to coat.

In batches, dip them in the bowl of eggs, then in the bowl of Indomie crumbs.

Deep fry/ air fry until golden!

Place the sweet potatoes into the rolling basket 

Air fry at 200 degrees C for 20 minutes

Cut corn into 4 sections, brushed with melted salted butter.

Air fry at 200 degrees C for 10 minutes


Spicy Calamari Rings

Ingredients

1 pack noodles
1/2 cup all-purpose flour
Freshly ground black pepper
1 large egg
250g calamari rings
Vegetable oil

Instructions

In a plastic bag, mix the flour, Maggie seasoning and pepper.

In a bowl, mix the eggs with 2 tablespoons water.

Smash the noodles into small pieces and place it in a separate bowl.

Shake the calamari rings in the bag to coat.

In batches, dip them in the bowl of eggs, then in the bowl of Indomie crumbs.

Deep fry/ air fry until golden!

Crab Egg Wrap

Ingredients

1 pack of noodles
1/2 cup of sliced crab sticks
4 eggs at room temperature
1/4 cup of onions (chopped into chunky pieces)
Olive oil for cooking
Water for cooking the noodles

Boil noodles in water without the flavor pack.

Strain cooked Indomie noodles and set aside.

Add one teaspoon of olive oil and add it to a large pan.

Heat up the olive oil and saute the chopped onions and sliced crab sticks until caramelized.

Crack two eggs in a large bowl. Beat and pan fry into a thin egg wrap.

Mix noodles with the Indomie garlic oil (make 2 varieties- non spicy version using Indomie caramel sauce and spicy using chilli sauce)

Mix with the sauteed crab sticks.

Fill half the egg wrap with the noodles and fold it into half.

Drizzle mozarella, mayonnaise, ketchup or chilli sauce if desired!
