Banana Coconut Cake Recipe

What to do when I have too many overripe bananas? Of course to make more banana cakes! I have decided to adapt the recipe by making it more tropical, adding some coconut into the mixture. I didn't add any sugar to the cake as the bananas were already sweet.

Ingredients
1 cup milk/cream (240ml)
½ cup unsweetened dried grated coconut (30g)
1¾ cup all-purpose flour (260g)
2 1/2 tsp baking powder
4 large ripe bananas
1 stick butter (½ cup/113g)
1 large egg

Combine milk and coconut in a bowl. Let it stand at room temperature for 30 minutes. 

In a medium sized bowl, combine all-purpose flour and baking powder. 

Stir to get ingredients well mixed. Peel and mash bananas in another bowl. 

Preheat oven to fan 180°C.

Cream butter and sugar until light and fluffy, about 2 minutes. 

Beat in egg.

Pour in half of the coconut mixture, half of the mashed bananas, and half of the flour mixture.

 Beat for 30 seconds. 
 
 Repeat.
 
 Mix until batter is smooth. This should take 1 to 2 minutes.

Pour batter into prepared pan.

Bake for 1 hour or until wooden pick inserted in the center comes out clean. 

Cool in the pan for 10 minutes, remove and cool on wire rack.
Enjoy a slice of cake with some cream cheese frosting or peanut butter ! Recipe for frosting here.


How to make your children eat the rainbow?

Do you have little picky eaters at home? I have 2! We often end up with crying and tantruming toddlers at the dining table. I thought I was going to give up trying. But recently, I picked up some tips to get my kids to eat! It's called eating the rainbow concept. So far we have made some promising progress at home. I'm a pleased momma indeed.


1. Eat rainbow food. Choose food of various colours. Teach my boys the different colours of the food and eating all of them.
2. Talk kids. Don't use bombastic language like protein helps you to build muscles. Try taking chicken will make you a stronger policeman and fireman! (These 2 jobs are my boys' obsession)
3. Get the small hands to help in the kitchen. When they are involved in the washing, cutting and cooking, the boys get to know about the food they eat and widen their acceptance
4. Keep trying! Whenever introducing new food, insist on at least 1 bite to show respect to the hands who put the food on table. If they don't like it, they can say no, thank you bye. It can take up to 30 bites before children take up a liking.
5. Camouflage certain ingredients into favorite food for example vegetables into omelette/bread/cake.

This ABC soup is very colorful, easy to make and definitely can be prepared in the morning for lunch before I head to work.


Ingredients
2 brown onions
1 carrot
2 sweet corns on the cob
4 small tomatoes
2 potatoes


1/2 cup of organic soy bean
3 chicken thigh with bones

Firm tofu cubes

Salt soy sauce and sesame oil to taste

Blanch chicken in hot water to skim impurities.


Cut everything into big chunks and place in Russell Taylors pressure cooker inner pot.

Add water to cover the ingredients.

Seal the lid. Make sure the valve is closed.


Set pressure cooker to the Soup Preset.

Set timer if needed.


Voila! A pot of wholesome meal can be enjoyed with some steam rice or noodles.


Remedy for Dry Hands | Sensenique Natural Body Wash Review

Microwaved Peanut Mochi

Craving for some soft chewy mochi but can't be bothered to make some because it's too labourous? Don't worry I have a foolproof recipe that you will definitely love!

Ingredients
1cup glutinous rice flour
300ml water
1/3cup white sugar
Peanuts 200g 
Sesame seeds

Mix glutinous rice flour with water until well combined.

Microwave 8mins on high heat settings.

The mochi is then done! The consistency should be just sticky but able to separate easily into small pieces. 


If left on the counter, the mochi will slowly harden. So it needs to be served warm. If needed, microwave the mochi again for 10seconds.

Mochi cannot be refrigerated or frozen. So there's an excuse for you to finish it all!


Roast the peanuts and sesame seeds in an oven at 220C for 5-10 minutes.

Blend the peanuts and sprinkle them on top of your mochi with some white sugar and sesame seeds.

How to care for your hair during lockdown| Marvel by Melix Hair Care Series Review

This Covid 19 era calls for social distancing and Malaysia is already in the 7th week of Movement Control Order. Spending more time at home with the hair saloon closed means that I need all the more reasons to pamper myself. I have chopped off half of my hair on my own as it's really a hassle to dry them up as I have to shower a lot these days in and out of work.

1. Ask dear hubby and mommy to babysit for 1hour.
2. Infuse some lavender essential oil.
3. Put on some relaxing spa music using my phone.

5. Massage the scalp thoroughly for 10 minutes.
6. Rinse my hair.

Sushi Rolls Recipe

Time to try some Japanese food at home. Believe it or not it's my first time making sushi at home. It's not as tough as I thought. But there's definitely room for improvement.


Ingredients A
1cup calrose rice
2cups water


Wash rice grains and cook it in the rice cooker. Prepare at least 30mins before mealtime.

Ingredients B
2 tbsp rice vinegar or mild cider vinegar
1/2 tbsp sugar
1/4tbsp salt
1/4 tbsp mirin, sake or sweet brandy (optional)

Serves 3

Heat over low heat in a small saucepan, and stir until the sugar and salt dissolves.

Fold B into the rice while still warm using a spatula ( at least 15mins after rice cooker is switched off to avoid the rice from sticking to the pot)

Ingredients C
1 can Lotte luncheon meat

1 Australian carrot

2 eggs

1 Ayam Brand Light Tuna Mayonnaise
3slices GotKimchi preserved radish
Tao Kae Noi big nori sheets (original flavour)
10 tsp mayonnaise


Make an omelette.


Pan fry slices of luncheon meat.

Peel carrot.

Cut them into long strips.


Place sushi rice while warm to cover 3/4 of the nori sheet.


Place ingredients as shown.

Roll the sushi. Watch this video for important tips.


Enjoy! We didn't add soy sauce or wasabi because TKN nori sheets are already very flavoursome.

It's a good idea to let the children make a few sushi rolls-- it trains their fine motor skills. And they were so delicious that the boys kept eating while making the rolls.

Jacket Potato Recipe

It takes forever to bake jacket potatoes but they are definitely worth it. The crispy skin yet soft and dense potato with melted cheese, butter and mayonnaise. Purely sinful-- can be an awesome and filling iftar dish.
So we used petite potatoes and Butterfly Air Fryer to half the cooking time. Remember to place them in the round basket so they can roll around to ensure even cooking.

Ingredients

A pack of petite potatoes
5 tbsp butter
50g cheddar, grated
4 crispy turkey slices, pan fried then thinly sliced
2 king oyster mushroom, pan fried then thinly sliced

Heat air fryer to 200C (Roast and roll function) and bake the potatoes in the round basket for 15mins.

Then turn to  Bake (180 C)  for  45mins until  the skin is crisp and the flesh soft.

Cut a cross on top of each potato, squeeze the sides, add butter, cheese and your favourite topping. 

Serve immediately!

Have it with crackling air fried 'roasted' tandoori chicken thigh for a heavenly combination.

KitKat Banana Cheesecake Recipe

Hey, it's my birthday! I always think birthday is about the celebration of my mother's love and upbringing. Thanks Mom. So we ought to indulge (with some caution)-- there we go with my healthier version of Kit Kat Banana Cheesecake.

Ingredients

FOR THE BASE
50 g butter
160 g belVita banana and oat cookies, finely crushed
15-20 Kit Kat milk chocolate bars

FOR THE TOPPING

4 medium ripe bananas
4 tbsp peanut butter
250 g cream cheese
200 g plain yogurt
2 large eggs
200 ml double cream

Melt the butter in a pan and stir in the oatcakes and crackers until well coated. Press into the base of the tin to make a firm layer, top with Kit Kat Bars. Chill for 30mins.

Place slices of cut bananas onto the base.
 
Heat oven to 220C fan and lightly oil a non-stick loose-based square glass cake casserole.

To make the topping, mash the bananas in a large bowl, then beat in the peanut butter,  cream cheese, yogurt, eggs and double cream until well mixed. 

Pour onto the biscuit base and bake for 10 mins, then turn the oven right down to 90C fan and cook for 25 mins more. Turn off the oven and leave the cheesecake inside to cool. 

It's normal for the mixture to turn brownish as the banana oxidizes.

When cold, arrange Kit Kat Bars on top of the cake then chill for 3-4 hrs. (Cooling the cheesecake this way should prevent it from cracking.) The cake can also be frozen and served like ice cream cake! Yumz.

Dust cocoa powder on top before serving if desired.

Cheap Homemade Yoghurt Recipe

I love culturing my own yoghurt because it's pure without additives and sugar. But using Easiyo sachets can be fairly costly as 1L of yoghurt started is priced at RM25 each. 

I finally came upon this yoghurt starter from Lazada! It's shipped all the way from China so it took around 2-3 weeks to arrive in mail. But it's worth it!

Each pack contained 10 small sachets. 1 small sachet can be made into 1L of yoghurt! They have to be stored in freezer to prolong shelf life and thawed to room temperature for about 15-20 minutes before use. Since the starter sachets are  small, they didn't occupy much fridge space. They are best used within1 year after the manufacturing date.

Instead of using milk powder, I changed to UHT full cream milk which is a lot more convenient. Otherwise the instructions were as per my previous post.

This batch of yoghurt is definitely not as sour but it's also less thick. But it's better tolerated by my family.

Top with some freshly cut fruits and nuts for a wholesome breakfast or dessert!
